Jackfruit Burger Patty Recipe (Easy & Delicious!) (1)

Let’s talk jackfruit recipes today! Just because I’m obsessed with this unique fruit, and I can’t wait to tell you about it. Jackfruit is native to South and Southeast Asia, and it’s the largest tree-borne fruit in the world (it can weigh up to 80 pounds!).

There are two ways to eat jackfruit: 1) ripe, when it’s subtly sweet and perfect for desserts; and 2) green, as a vegetable/delicious substitute for meat.

Yes – when it’s unripe, it has a meat-like tasteand is typically used in curry dishes in Asia. Which brings me to today’s jackfruit recipe: curry burger patties! This recipe uses canned jackfruit.

If you are scared of making a fruit into a burger – don’t be. I promise this is worth your while.

I’m not going to say it takes like ground beef (why does everyone say “it takes just like meat?”), but it does have a special meat-like flavor all its own, and you ARE going to love it!

Ingredients

  • 1 can of green jackfruit, drained and rinsed– you can get it online or in an Asian grocery
  • 1/3 cup chickpea or garbanzo flour
  • 1/4 cup chopped red onions
  • 1 tsp of grated ginger
  • 1/4 cup cilantro, chopped
  • 1 tsp of curry powder
  • 1 tsp paprika (use red chili powder for more spice)
  • Salt and freshly cracked paprika to taste
  • 1 T of oil + enough for shallow frying the patties

Additional Ingredients

  • Burger buns
  • Salad greens tossed with some olive oil, lemon juice, and salt & freshly cracked black pepper
  • Condiments of your choice

Tips and Thoughts for This Recipe

  • You can find jackfruit in most grocery stores that have an international section. You can also look for it at Asian grocery stores, and Trader Joe’s usually have it as well.
  • I got three patties with one can of green jackfruit. The recipe can be easily doubled.
  • Look for jackfruit that is canned with water or brine as opposed to syrup.
  • Boiling the fruit creates a nice stringy texture and helps to remove any metallic taste from the can.
  • Add a little bit of red pepper to your patties instead of paprika (or in addition to) for a little spice.

FAQs

How to keep burgers from falling apart? ›

Add 1 egg yolk per pound of hamburger. It won't add appreciably to the fat content and will bind the meat beautifully. The other thing you can do is add canned, drained, crushed black beans or chickpeas to the hamburger. The starch from the beans will bind the meat together and add an interesting taste.

Should you add egg to burger patty? ›

In my experience, the best way to prevent your burger patties from falling apart during cooking is to use both egg and breadcrumbs to make them. You can add eggs to the mixture and then, coat them with breadcrumbs before shaping them into burger patties.

What helps homemade burgers stick together? ›

Bind the patty together

If you're going for a leaner meat or adding bulky ingredients (eg spring onions, onions, chillies), add an egg and a handful of breadcrumbs to bind the burgers.

What is a good binding agent for burgers? ›

One of the most common substitutes is breadcrumbs, but sometimes the breadcrumbs can fall off when the burgers are cooking if there are too many or they are too dry. Other popular substitutions for eggs include cornstarch, flour, ketchup, porridge oats, cracker crumbs, and ground flaxseed.

Why put crackers in burgers? ›

Once you've picked the right meat, the next step in making this incredibly juicy hamburger recipe is the addition of crushed crackers. Sound crazy? Trust us, it works! This is because the starch in the crackers keeps the natural fat and juices from escaping the patty during the cooking process.

What makes a good patty? ›

The golden rule of burgers is in the vicinity of 70/30 meat/fat to 80/20. Just ensure there is a good amount of visible fat. In the picture above the chuck is a bit on the lean side, the brisket a bit on the fatty side. Combined they will be spot on.

How to properly cook beef patty? ›

Pop your burgers on the barbecue or in a hot, non-stick frying pan with a little oil. Cook for 5-6 mins on each side for medium and 8-9 mins on each side for well done. The NHS Live Well website recommends not leaving any pink meat in your burger.

How do you make patties stick together? ›

There are a few ingredients you can add to burgers to help hold them together, such as eggs, breadcrumbs, grated cheese, or even cooked grains like quinoa or rice. These ingredients act as binders and help keep the burger patties intact while cooking.

What is the perfect patty ratio? ›

The best burgers are made from freshly ground, high-grade beef chuck in an 80/20 mix (meat to fat). This is just the right ratio to keep your burger patties juicy but not falling apart.
